About the Common Bean
The common bean has been cultivated for thousands of years in Mexico, Central America, and the Andean region. An herbaceous annual in the Fabacee family that grows as either a bush or a climbing vine, depending on the variety. They produce small flowers in shades of white, pink, purple, or yellow, which develop into elongated pods containing multiple "seeds," which we call beans.
How is it Harvested and Prepped?
For green beans, harvest when the pods are tender, usually early to mid-summer. For dry beans, allow the pods to dry on the vine.
