About Maize

Maize, or corn, is a tall, annual grass in the Poaceae family. It grows between 5-12 feet tall, producing long, narrow leaves and distinctive "ears" covered in rows of multicolored kernels. Maize is wind-pollinated and thrives in warm, sunny climates. Maize is an Indigenous Turtle Island gift to the world, although it is now one of the most widely cultivated crops globally, valued for its versatility and nutritional benefits.

How is it Harvested and Prepped?

Maize can be boiled, roasted, or dried when harvested. Then, it is often ground into cornmeal, masa, or arepa), but could be popped (popcorn) or fermented (chicha, nixtamalization for tortillas).

Benefits of Maize
